I've made this for years and it's one of my favorite Cooking Light recipes. It takes quite a bit of prep at the start but has incredible depth of flavor and is worth every minute spent making it.
Found this recipe as one of the top recipes of the year in Cooking Light Magazine so I saved it. I had to buy a slow cooker to make it. It was delicious. I definitely would make it again. It had different flavors than a regular beef stew.
Was disappointed. Read the reviews and most said it was very good. I would not agree. Either I did something wrong, or this dish just isn't for me. Will defiantly not be making again.
Hello all. Well this has been prepped and currently slow cooking. It was a little involved to prep but really not as bad as I thought it would be (then again I tend to expect the worst so I am pleasantly surprised). A few notes, I bought Black Sheep brand Cabernet red wine and Kalamata olives (couldn't find Nicoise). Also used stew beef chuck which allowed me to save time not having to trim and cut it myself as well as pre-cut carrots and celery. I did find the porcini mushrooms which I could not find at Fresh Market but rather at my (well one of my) local harris teeters in the produce section (..not like there are a million or anything). For the herbs I do like to use fresh because lets face it, there IS a difference. I am making this for my foodie dads belated birthday gift. So we will see how it goes.
Very good, solid recipe. Complex flavors. I didn't have 7 hours to cook in slow cooker, so I simmered on stovetop for about 3+ hours, and it was still very tender.
At first I was like there is no way this will be a good as it looked in the picture. I was also a little afraid that my kids 21 & 12 would even try this. Letting it simmer in my slow cooker was the key. The aroma was wonderful and my kids could not wait to try it. What a success!! This will become a winter staple for our family.
This was a fabulous dish! I did it in a 3 qt. crockpot and it still worked well. I will mix the ingredients more at the beginning rather than leaving the meat all on the bottom of the pot. I didn't finish it with the cornstarch and served it over medium egg noodles - my company loved it and I will definitely make it again! It is some work on the front end but well worth the effort - the house smelled good all night long!

Really good dish but requires a fair amount of prep on the front end. The end result is definitely worth the work. I will make this one again!
I've made this a couple of times to RAVE reviews. The porcini mushrooms really add umami richness and depth.
I was skeptical that this recipe would as good as promised. WOW DELICIOUS ! I can't wait to make it again and ............it's summer ! I added zuccinni and double the broth and wine ( thickened with soup flour) This is probably the best Cooking Light recipe Ive ever made !
I love making stews that cook all day and have some work of preparing but at the end just lift the lid and eat. I would make this again.
Delicious. I divided the recipe by four, and cooked it in a dutch oven on the stove. Worked like a charm, and the meat absolutely melted in your mouh. Will definitely be making this again.
The flavors in this dish are fantastic, and I'd use the combination and the recipe again. But I don't care for well done beef, so if I were to do this recipe again, I would follow the instructions for the stew backwards - slow cooking everything and then browning the beef near the last hour, and then I'd turn the pot to warm to slowly cook the beef for just 20 minutes, tops for a more tender result.

I liked it, my husband loved it, kids were 1/2 and 1/2 on it. Fairly easy and straightforward to make, made the kitchen smell great! Husband is begging me to make again.
Easy enough for a weeknight, good enough for company. Very rich taste, the olives really make the dish!
I left out the olives. Delicious!
Easy and excellent. This will definitely become a regular meal in my home.
